(makes two tacos)
Ingredients
6 oz boneless skinless chicken breast
olive oil spray (to coat pan)
1/2 cup romaine lettuce
1/2 lemon
2 mini Siete GF Cassava Tortillas
1 slice of Violife Smoked Provolone DF Cheese
1/4 cup chopped bell peppers
1 teaspoon chili powder
1/2 teaspoon paprika (optional)
1/4 teaspoon garlic powder or onion powder
Optional: cashew queso
Instructions
Add the chicken, garlic, lemon, and spices to a zip-seal bag and shake to combine
Heat a large pan to medium-high heat. Cook chicken on both sides until fully cooked and chop into small pieces
Heat tortillas up on the stovetop on medium-high for 15-20 seconds on each side, then return to a seperate plate, keeping stove on
Coat bottom of tortillas first with queso (optional), add then chicken, lettuce, pico de gallo, and 1/2 cheese slice into each
Return folded tacos back to stovetop on medium heat and cook on each side for approx 2 min
Once golden brown, take tortillas off stove and place upright to cool (placing upright prevents them from getting soggy and keeps them crispy)
