Ingredients
4 chicken breasts sliced in half to make 8
2 egg whites
3/4 cup GF breadcrumbs (i also like them to be low sodium but that's just a preference, i'm so extra)✨
1/4 cup Violife DF Mozzarella Shreds
1 cup low sodium marinara sauce
2 zucchini, spiralized
Instructions
Preheat oven to 450°F and spray a large baking sheet with olive oil spray
In a small bowl, combine breadcrumbs with italian seasoning
Dip chicken into egg whites and press into bread crumb mixture, coating both sides
Transfer to prepared baking sheet and bake in the oven for 25 minutes
While the chicken is cooking, coat a nonstick skillet with cooking spray and place the zoodles over medium-high heat until tender, 5-6 minutes
Remove chicken from oven, spoon 1 tbsp sauce over each piece of chicken and top each with 1 1/2 tbsp of shredded mozzarella cheese
Bake 5 more minutes or until cheese is melted & enjoy!
